Barista Tips
This is a high altitude, washed coffee, which means the beans are naturally dense. To bring out the delicate fruit notes while keeping the cup balanced and avoiding over extraction, we recommend the following starting point:
Brew Ratio
1:2 to 1:2.2
For example, 20 g in, 40 to 44 g out.
Extraction Time
27 to 30 seconds.

This espresso begins its journey on the volcanic plateau of Popayán in Colombia. Cool mountain air flows down from the forests of Munchique National Park, while mineral rich volcanic soil helps produce exceptional coffee.
The beans are grown by an alliance of Indigenous farmers who see coffee as more than a crop. For them, it is a deep connection to their land, their traditions, and their community. The coffee is cultivated on small family farms located between 1500 and 2000 metres above sea level. Here, generations of knowledge guide every harvest.
Farmers combine traditional growing methods with modern sustainable practices. As a result, they protect the local ecosystem while also creating a more stable future for their families and community.
At this high elevation, the coffee cherries ripen slowly in the cool mountain climate. This slow development creates beans with greater density and natural sweetness. After harvest, the producers use a classic washed process and dry the beans carefully on shaded beds. This helps preserve the clean and distinctive character of the Caturra and Typica varieties.
In the cup, the result is a beautifully clean and structured espresso. For black coffee drinkers, it offers refined acidity, excellent clarity, and a deep lingering sweetness.
